The Chief’s Cantina Taco Truck, Tampa has been serving up delicious Tacos for the past 4 years now. Owners Marcos and Tracy Rios began in the industry with an ice cream truck though in 2016 and then added The Chief’s Cantina. Having food trucks has been a way for the two of them to connect and spend more time together as empty nesters.  The decision to start a food truck was a fantastic combination for these two to combine their passions to bring together community through great food. Marcos’ culinary heritage of authentic Mexican food definitely makes this truck stand out as a premier Taco Truck in Tampa.

For these two the best part of the business is going to different locations every day and seeing how their work brings joy to different communities.  It is unlike any regular 9-5 job, which neither of them could imagine going back to.  Tracy loves the super fast paced events, like catering where there are over 200 orders per hour.  Marcos prefers a bit slower pace that allows him to chat with the customers and build rapport with their clientele.  Since Marcos is retired US Navy chief many customers come to share stories of their time in the service, family serving in the military, or their personal connection with Mexican cuisine. Marcos has a knack of making friends at the window.  He has people seek him out because they met him last year at the same event and they still remember him. They have even had customers come back to give him a Chiefs coin or other memorabilia.

The most popular item would be a toss up between chicken quesadillas and carne asada tacos.  It’s hard for us to recommend what the best item is because we are divided.  Marcos would say tacos, either Al Pastor or Carne Asada. Tracy hands down would choose carne asada nachos. And Jocey's go to is a steak or chicken quesadilla.
